It is spring!!

That means a new batch of springtime fruits like strawberries and rhubarb are ready to pick!! has the perfect combination for a healthy protein-packed snack!


1/2 cup stevia

1 cup oat flour (easily made with old-fashioned oats pulsed in a blender)

4 scoops (130g) Muscle Pharm Combat, Cinnamon Bun

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

4 egg whites

1 cup fat free/skim milk (almond or soymilk work as well)

1 tsp vanilla extract

1 cup fat-free, plain Greek yogurt

1 cup of chopped strawberries

1 cup of chopped rhubarb

Chopped walnuts would be delicious also!


Preheat oven to 350 degrees.
Spray muffin tins with non-stick spray.
Mix all dry ingredients then add wet ingredients and stir until combined.
Gently fold in chopped strawberries & rhubarb.
Pour into muffin tins.

Makes 24 muffins.

Besides, being a mom and wife I am also a bodybuilder. My husband and I have competed in several competitions from 2012 from 2015.  Every competition brings more information on how to be better and stronger both mentally and physically.

I reached 200 pounds after having my children and several things have led me down my path of wanting to be healthier and better for myself and for my family; countless fitness dvds, a gym membership, leading a weight management class at my church and a personal trainer telling me I had good symmetry.

I have learned many things on my fitness journey, but the one thing that I hear over and over no matter what size they are, is the self-talk that many women tell themselves regarding the way they see themselves. I am incredibly grateful for the opportunity to have the tools and wisdom of the people around me to help women of all shapes and dynamics to help them #findtheirstrength
