STRAWBERRY PROTEIN COOKIES
It’s getting closer to the time of when strawberries are at their best, so why not make a new recipe that incorporates these delicious berries? Especially now that my husband and I are growing our own strawberries. Bonus points: These have protein, are low in calories and carbs, and I mean – who doesn’t enjoy a yummy cookie?
This recipe is very simple and you won’t need a lot. Be sure to have a nice, quality protein powder, like the BPI Vanilla Cookie protein powder from Her Suppz. This protein has a good amount of protein, tastes great, bakes very well, and is low in carbs. By the way, you may want to double up on this recipe because it typically makes 6 cookies. Usually I will double everything so I can make about 12-14 cookies and have 2-3 as my pre-workout snack throughout the week.
WHAT YOU NEED
1 cup of fresh, sliced strawberries (mashed)
1/2 cup of protein powder (I used BPI ISO HD, Vanilla Cookie )
2 TBSP of (any) flour
1/2 TSP of baking powder
WHAT YOU DO
Preheat your oven to 350 degrees Fahrenheit.
Combine the mashed strawberries with the other ingredients and mix very well.
Spoon 6 cookies onto parchment-lined cookie sheet and shaped slightly or press cookie down a bit.
Bake for 10 minutes.
Remove from oven and allow to cool.
Refrigerate the cookies once they have cooled.
These do not grow a lot, so shape and press them out to make them more the size and depth you’d like.
Do NOT over bake.
They will brown very slightly.
Using the ingredients I used, these come in at about 40 calories per cookie.

Faith’s favorite recipe uses 1 scoop of the Cinnamon Cereal Crunch flavor, mixed with 1/2 a banana, 1/4 a cup of vanilla Greek yogurt, 1 tsp cinnamon, 8 ounces of unsweetened almond milk, and 1 cup of ice.
