Calling all you crazy Pumpkin-Pe-ople… at last, fall is in full swing! So of course, it’s time to stock up on those shelves of pumpkin in your pantries. This delicious latte not only includes your favorite fall fruit (yup, it’s a fruit alright), but like most of our recipes, it also includes the added benefit of protein powder.

INGREDIENTS for Pumpkin Protein Latte
- 2 tablespoons vanilla protein powder, Muscletech, vanilla
- 1 packet no-calorie sweetener
- 2 teaspoons instant coffee granules
- 1/4 teaspoon pumpkin pie spice (option: more for topping)
- 2 tablespoons canned pure pumpkin
- 1/2 cup unsweetened vanilla almond milk
Optional: light whipped topping
Place protein powder, sweetener, coffee granules, and pumpkin pie spice in a tall microwave-safe mug or glass. Add 3/4 cup water, and mix well. Place in microwave and heat for 45 seconds or until hot.
Stir the ingredients until all the protein powder and coffee granules have dissolved. Then add the canned pumpkin, and continue to stir until uniform.
Next add the almond milk and mix well. Finally, continue to microwave for another 45 seconds or until hot.
