Easter is just around the corner and with all those wonderful traditional Easter eggs and sweet treats around the house it would be easy to hop on that chocolate bunny trail of calories!
We have an egg-cellent alternative to those peanut butter eggs filling all those Easter baskets and grocery aisles!
Keep these Protein Peanut butter Eggs in your frig or freezer and you won’t have to feel guilty for giving into the holiday treats!
INGREDIENTS for Protein Peanut Butter Easter Eggs
1 1/3 cup AMERICAN METABOLIX KETO MEAL, either Vanilla Cake or Peanut Butter Cookie!
1 cup Sinister Labs Angry Mills Spread, Peanut Butter or flavor of your choice
one cup dark chocolate chips
DIRECTIONS for Protein Peanut Butter Easter Eggs
In a medium mixing bowl, combine peanut butter and AMERICAN METABOLIX KETO MEAL. Mix until dough forms. The peanut butter filling should be playdough-like in consistency but not sticky. If your dough is a bit sticky, add a touch more protein powder.
Using approximately 2 tablespoons, form the mixture into egg shapes. Place the Easter eggs in the refrigerator for at least 30 minutes or firm.
Place the dark chocolate chips in a small glass bowl. Microwave for one minute. Stir, then continue to microwave in 30-second intervals until chocolate is completely melted and smooth.
Working with one egg at a time, place top side down in the bowl of melted chocolate. Use a fork to flip the egg over and cover the bottom with chocolate. Place Easter eggs on a wire rack, parchment or waxed paper to harden. Repeat with remaining Easter eggs.
Note: The ingredients are much better than those found in other similar candy. You may also tweak the ingredients as you desire.
