It’s peanut butter jelly time! It doesn’t matter how old you are there is just nothing better than a good old’ PB&J sammie! The comfort food that all other comfort foods wish they could be!
These muffins are easy, they will fill you up and they are packed with protein and even easier to grab-and-go in a muffin! They are a perfect blend of carbs, protein, and fat for a pre- or post-workout treat and a great snack for the kiddos too. Take them to the beach, the pool, or wherever you need just a little something to hold you over.
INGREDIENTS
1 ½ cups old-fashioned oatmeal (for a smoother muffin blend the old fashioned oatmeal in a blender to a finer flour-type consistency)
2 eggs or 4 egg whites
3 tsp stevia
1 tsp salt
1 tsp baking powder
½ cup unsweetened almond milk
2 TBS peanut butter
2 scoops NUTRABIO 100% WHEY PROTEIN ISOLATE
Sugar-free fruit preserves of your choice
DIRECTIONS
Preheat oven to 375 degrees. Blend all ingredients except preserves in a blender. Pour batter into a greased muffin pan. Drop a tbsp of sugar-free jelly in each muffin. Bake at 375 degrees for 15-20 minutes.
