This is a great recipe to use up that bag of spinach that has been sitting in your frig! Do you have little eaters that do not get enough vegetable? This is a great base recipe to sneak some in if you have too. You could try carrots, peas or even black beans too! See it is kinda like magic
INGREDIENTS FOR MEATBALLS
1 large bunch (about 3 cups) of spinach, washed and torn, cooked until tender (or frozen)
2 medium onions, minced
3 cloves garlic, minced
2 tbsp olive oil
1 pound lean ground beef or turkey
1 beaten egg or 2 egg whites
1/3 cup grated parmesan
1/2 cup dry breadcrumbs
Salt and Pepper to taste
Sauté onion and garlic in olive oil over low heat until soft. Mix lean ground beef or turkey with egg (or egg whites), grated Parmesan cheese, breadcrumbs and salt & pepper. Add onion/garlic mixture to lean ground beef or turkey mixture.
You may use the same pan that you sauted the onion/garlic mixture or Heat oil or use Pam butter spray in skillet on medium heat. Using your hands or a small cookie scoop, form golf ball sized balls. Place balls on heated skillet and saute turning meatballs gently until brown on all sides.
Another option would be to spray a cookie sheet with butter spray and bake them in the oven.
Serve with your favorite gravy or spaghetti sauce.
Let cool and freeze them for future meatball emergencies.
