LEMON GLAZED ZUCCHINI PROTEIN BREAD

ALL THAT ZUCCHINI

If you have a ton of zucchini in your garden like we do every year you are always looking for recipes to use them up! I can not waste all that deliciousness.  Zucchini is so versatile and my favorite recipes to use them in are definitely all the different kinds of sweet breads.  I love lemon so adding a lemon glaze was a no-brainer for me.

Like most of the recipes on HerSUPPZ this one also uses the added benefits of protein powder.   Protein powder not only adds a nutrient that most of us do not get enough of, it also replaces a nutrient that most of get too much of!

 

 

INGREDIENTS

1 1/2 cups flour

1/2 cup (apx 2 scoops) protein powder, vanilla flavor

2 tsp baking powder

3 eggs (1 whole egg and 2 whites only)

1/2 cup oil (or 1/4 cup and 1 snack size cup applesauce, unsweetened)

1 1/3 cup Splenda (or sugar)

2 TB lemon juice

1/2 cup buttrmilk

zest of one lemon

1 cup grated zucchini

 

GLAZE

1 cup powdered sugar

2 TB lemon juice

1 TB milk

 

DIRECTIONS

Mix flour, protein powder and baking powder in a medium size bowl.  In another bowl, add beaten eggs, oil (and applesauce if using), and sugar and stir until well combined.  Add lemon juice, buttermilk, lemon zest and blend together.  Fold in zucchini until mixed well.

Add dry mixture to the wet mixture and stir until well combined.

Pour batter into loaf pan.  Bake at 350 degrees for 40-45 minutes.

After bread is done,  while still warm drizzle glaze over bread. Enjoy!
