As a mom I try to sneak veggies in everywhere possible.
I try to get at least two servings in every meal and that even includes breakfast. Now a nice egg white and spinach omelet is awesome, but every once in awhile you have to have something sweet to start your day.
These muffins will satisfy your craving for gooey baked goods and you won’t sacrifice your macros.
These muffins are packed with protein and low in sugar so you’ll skip the mid-morning crash and feel full for hours!
Bonus: the zucchini and applesauce make the muffins super moist, not dry like many other protein recipes.
1 zucchini (finely grated)
½ cup all purpose flour
1 ½ tsp baking powder
¼ cup egg whites
½ cup applesauce
2 tbsp honey
¼ cup Now Foods Virgin Coconut Oil (melted)
1 tsp cinnamon
Mix wet ingredients first, then pour in dry ingredients until desired consistency.
Bake at 375 for 10-12 minutes.
