7 oz (1/2 can of 15 oz.) pure pumpkin
1/2 cup applesauce
2 egg whites
3/4 cup old-fashioned oatmeal
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon pumpkin pie spice
1/2 teaspoon cinnamon
3 packets of stevia (or sweetener to taste)
DIRECTIONS for muffins
Preheat oven to 350 F degrees. Spray muffin tin with non stick cooking spray.
In a large bowl mix all wet ingredients together. Add the dry ingredients making sure they are mixed in well. If you like you can use a separate bowl to whisk dry ingredients together first before adding them to the wet ingredients.
Bake until the top is golden brown, puffed up and a toothpick inserted in the center comes out clean and dry, about 17-20 minutes.
