Looking for a healthy treat to share with others? These oatmeal raisin, chocolate chip cookies can be made easily with simple ingredients. I actually used this same recipe and formed “breakfast bars” out of them too! Needless to say, there wasn’t any leftovers after bringing them to a family get-together!
INGREDIENTS for Oatmeal Raisin Chocolate Chip Cookies
1 1/4 cups quick oats
one cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter
1 large egg (or 2 egg whites)
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup chocolate chips
1/4 cup raisins
Optional: 1/4 cup other well chopped raw nuts if desired
DIRECTIONS FOR COOKIES
Combine the oats, flour, baking powder, and cinnamon in a large bowl and whisk together.
In another bowl, combine the applesauce, butter, eggs, vanilla, and honey. Whisk all together until blended, then pour the liquid mixture into the first large bowl with dry ingredients. Stir all ingredients until combined for a wet and sticky dough.
Add in chocolate chips and raisins (and other dry nuts if desired). Stir all ingredients together until blended.
Place bars in the refrigerator and let chill for at least 30 minutes (or up to a few days).
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Remove the dough from the refrigerator, you may need to let sit for 5-10 minutes to soften. Use a cookie scoop or form cookie shape with hands and around them around the baking sheet. Bake bars for 10 minutes, or until the cookies are golden brown. Remove from the oven and let cool for 2 minutes before removing from baking sheet.
