Fall is here and with Thanksgiving and Christmas right around the corner, we know how calories can creep upon us!

Fall is the best time to take advantage of all the wonderful fruits and vegetables that are at the peak of freshness.  From beets to zucchini and everything in between it is the best time of year to incorporate some easy calorie cutting ideas.

These calorie-cutting cooking ideas will help you to save your waistline without sacrificing taste.

CALORIE CUTTING THE TATOR

To cut the carbs for mashed potatoes use half as many potatoes and boil with one head of cauliflower. Add in a couple cloves of garlic, salt & pepper and whip with an electric mixer or immersion blender until smooth. If potatoes are too thick, thin out with chicken broth for added flavor and proper consistency.

For healthy sweet mashed potatoes, add in cubes of cooked acorn squash when blending with your immersion blender or electric mixer. Add cinnamon and some chicken broth, and maybe a bit of sugar free maple syrup.

FILLING UP ON CALORIES

Fill up on plenty of fresh vegetable sides like roasted brussel sprouts, onions, eggplant, tomatoes, pepper & zucchini. Roasting these and other of your favorite veggies will bring out the natural sweetness in them. Your hunger pains will be satisfied enough to skip the bread, rolls and added butter. You won’t even miss the heavy sauces that are full of carbs and fat that you just don’t need.

CALLED STUFFING FOR A REASON

When making the stuffing, simmer the onion, celery and peppers in chicken broth, instead of butter. Stir in bread crumbs and seasonings. Cover and let sit until stuffing is moist and delicious.

4 scoops Optimum Nutrition Gold Standard 100% Casein, Creamy Vanilla

2 cups skim milk

1 cup sugar-free cool whip

1 cup pumpkin puree

pumpkin spice

dash vanilla

stevia

Directions

Mix well, spoon into ramekins and chill.
