This recipe is not only delicious it is packed with nutrients and tastes like you are cheating on your diet. Pumpkin is packed with a ton of nutrients and chocolate has anti-oxidants. All that with your extra protein and…you just can’t go wrong with Pumpkin Chocolate & Protein!
INGREDIENTS for Pumpkin Chocolate Protein Bars
1 cup pure pumpkin
¼ cup maple syrup
2 TB milk
2 TB pure vanilla extract
3 TB NOW Coconut Oil
½ cup flour
1 cup (approx 4 scoops) DYMATIZE Elite Whey Protein, Chocolate Cake Batter or Rich Chocolate
2 tsp ground cinnamon
¼ tsp baking soda
½ tsp ground nutmeg
¼ tsp salt
Pinch ground cloves
TOPPING for Pumpkin Chocolate Protein Bars
½ cup melted chocolate chips
DIRECTIONS for Pumpkin Chocolate Protein Bars
Preheat oven to 375 degrees F and spray an 8X8 baking dish with nonstick spray.
In a large bowl combine eggs, pumpkin puree, maple syrup, milk, vanilla extract and NOW Coconut Oil using a mixer if necessary.
Combine the remaining ingredients flour, DYMATIZE Elite Whey Protein, cinnamon, baking soda, nutmeg, salt, and cloves in a separate small bowl and mix thoroughly.
Whisk dry ingredients with wet ingredients until smooth.
Pour into an 8×8 in a baking dish and bake for 22-25 minutes or until a toothpick inserted comes out clean.
Melt a ½ cup of chocolate chips and spread evenly over the top.
