Christmas Gift Granola is a great gift to have ready for those spontaneous holiday pop-ins or to give your kid’s teachers!
This recipe is highly flexible. If you don’t have an ingredient simply substitute it for something you do have.
½ cup dried cranberries
4 cups rolled oats
¼ cup honey
1/3 cup brown sugar
½ tsp cinnamon
¼ tsp salt
1 tbsp vanilla extract
1 cup almonds (chopped)
1/3 cup melted coconut oil
Melt the coconut oil, brown sugar, and honey together. Add in the cinnamon, salt, and extract.
Mix the liquid mixture with the rolled oats, and chopped almonds.
Place the granola mixture into the sprayed baking pan and bake for 30 minutes @ 300 degrees or until lightly golden brown.
Stir well every 10 minutes.
With 5 minutes cooking time remaining, add the dried cranberries and stir to combine.
Let cool completely. Break mixture into clusters.
If you want to make your Christmas Gift Granola extra Christmas-y add some red & green M&M’s or red & green chocolate chips after it has cooled completely.
Place granola in a pretty container and add a pretty ribbon and you will be ready with gifts for every unexpected (or even expected) guest!
Granola can also be kept in air tight container in the refrigerator for up to 4 weeks.
