I used pears from my pear tree for this cake. I have been trying to find a way to use them all and oh boy this cake does not disappoint! My pears are usually pretty hard when I pick them so I have a lot of these suckers sitting on windowsills just waiting…waiting … so much waiting. But not anymore! I can not wait to use them in this recipe!

Now I’m not saying this is the healthiest of cakes, but I tried to make it as close to healthy-er as possible and still taste as decadent as it should.

My family is always making fun of me trying to make things “healthy”. I have had way too many fails and they are my testers. If it has that “baking with protein powder again, Mom?” texture, well, they won’t eat it and it gets thrown out or I have to eat it. And honestly, I don’t like it either.

The flavor is usually pretty good but that texture thing. So some of the less than healthy ingredients are included for this reason. If you are making solid healthy choices most of the time, you have room for stuff like this!

4 to 6 medium-sized fresh pears, chopped (I left the peeling on!)

2 cups all-purpose flour

1 cup protein powder, I used NUTRABIO 100% WHEY PROTEIN ISOLATE, in Pancakes n Maple Syrup

1/2 cup Splenda (or sweetener of your choice, I have also used Stevia)

1/2 cup brown sugar

1 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1/4 teaspoon ground cloves

12 tablespoons butter or 3/4 cup, melted

1/2 cup greek yogurt

1/2 cup buttermilk

2 whole eggs

1 egg white

one teaspoon vanilla extract

1 cup chopped nuts, walnuts, or pecans

If you have pears like mine that are super hard, boil until just a little soft. I like mine slightly hard so they stay together when baking. They felt like a not-quite-done potato if that helps.

Whisk together flour, protein powder, sugar, brown sugar. Add baking soda, baking powder, salt, nutmeg, cinnamon, and cloves in a large mixing bowl until well mixed.

Add melted butter, greek yogurt, buttermilk, eggs, vanilla extract.

Fold in pears and nuts.  

Pour into a sprayed 10-inch bundt pan.  

Bake in preheated 350-degree oven for 60 to 70 minutes checking to make sure cake is done on the inside.  

Cool for 20 to 25 minutes and remove from pan.

Let cool.

1/2 cup (1 stick) butter

1 cup brown sugar

1/3 cup heavy cream

1 cup chopped nuts, walnuts, or pecans

1. Melt butter in a saucepan.

2. Add brown sugar and heavy cream and whisk constantly over medium heat until sugar is dissolved.

3. Bring to a boil and allow to boil for 3 minutes, no more.

4. Remove from heat and allow to cool.

Store in refrigerator.

I actually doubled it and put it in a mason jar and it stays perfectly. It is sooo sooo good on ice cream!
