Why not start Christmas morning with the warm scent of cinnamon and cozy flavor of ooey gooey goodness? We have taken the wonderful ingredients of cinnamon coffee cake and made it even better with the addition of protein …of course! The Christmas season is full of wonderful food, family, and scents that fill the air with familiar traditions.
We made these delicious and healthy Christmas Morning Cinnamon Rolls using MAN SPORTS ISO-PROTEIN, Cinnamon Crunch Cereal.
Make the rolls ahead if you need to and simply warm in microwave then frost with our easy “Cream Cheese Drizzle” at the bottom of the recipe!
INGREDIENTS for Christmas Morning Cinnamon Rolls ʷⁱᵗʰ Protein
6 Tb stevia or Splenda
4 tsp cinnamon
1 ½ cups unenriched, unbleached flour (or 3/4 cup unenriched, unbleached flour & 3/4 cups whole wheat flour)
1 Tb baking powder
½ cup stevia
2 egg whites
1 cup of soy milk
1/3 cup unsweetened applesauce
¼ cup plain Greek yogurt

DIRECTIONS for Christmas Morning Cinnamon Rolls ʷⁱᵗʰ Protein
Preheat oven to 350.
Combine stevia and cinnamon and set aside.
In another bowl combine flour, CTD Sports Iso Licious, baking powder, and stevia and mix with a whisk.
Using a medium-size bowl mix together the wet ingredients (egg whites, soymilk, applesauce, and Greek yogurt). Combine the wet mixture into the flour mixture and stir just until combined.
Spray a 12-cup muffin pan or bread loaf pan with non-stick cooking spray.
Put just enough in each muffin cup to cover the bottom of the cups. If using a bread pan pour about an inch from the bottom.
Sprinkle with half of the cinnamon-sugar mixture in all the muffin cups or in an even layer across the batter in the bread pan.
Pour the remaining batter over the cinnamon-sugar mixture in the cups or bread pan. Sprinkle with the remaining cinnamon-sugar mixture on top of the batter.
Use a knife to swirl the batter around to give the marble effect or in a circle to make them look like buns. Making the swirl in the muffin cups is a little tight but it is worth it!
Bake at 350 for approx 18 to 25 minutes for cupcakes or 25 to 30 minutes for a bread pan.
Let cool before taking them out of the muffin pan or bread pan.
“CREAM CHEESE” DRIZZLE
Combine 1 scoop of CTD Sports IsoLicious in Cinnamon Cereal Crunch with plain, fat-free Greek yogurt, stevia (to taste) and a dash of vanilla extract. Using a spoon drizzle the topping over the cupcakes after they have cooled completely.
Chopped almonds or pecans would be delicious on top also!
