This mug cake recipe is for the serious choco-holics out there!
The lava is the hand full of decadent chocolate chips added in the second half of cooking!
Worried about the macros?
…just omit the chocolate chips! We promise this Chocolate Protein LAVA Mug Cake will still be absolutely satisfying!
The best part about this recipe is that it uses BPI ISO-HD protein as the base instead of your typical carby white flour.
The chocolate chips give it a little extra gooey goodness, but as it mentions above they are not necessary to give this decadent treat the delicious rich chocolate flavor!
1 TB flour
one scoop BPI ISO-HD
1 TB cocoa
1 TB Splenda (or your choice of sweetener)
one tsp instant coffee granules
1 tsp baking powder
1/4 cup light soymilk, vanilla
A splash vanilla extract
2 TB dark chocolate chips
Combine and mix all ingredients in a large mug or bowl.
Place in microwave and bake for 25 minutes. Stir and add the dark chocolate chips then put back in microwave for another 20-25 minutes. Let sit for one minute. Do not over-bake protein.
Serving Size: 1 very large serving
